Cupcake Basics

Learn how to bake and decorate sensational cupcakes! The class starts with an extensive demonstration of baking cupcakes. You will learn how to make simple sugar flowers, including small roses. We demonstrate how to make smooth, mouthwatering buttercream and then teach you how to pipe perfect swirls and tops.

This one day Cupcake Basics class is held in our welcoming and relaxed home environment in Greenwich, London. Our instructors (Shikhita and Jess) will demonstrate their baking techniques and divulge all the secrets of making our signature moist, light and flat-topped cupcakes.

We have a unique and insightful approach to home baking, whether it's for a hobby or with a view to running a home baking business. The day will start with an in-depth demonstration of baking cupcakes at home, using our tried and tested methods and techniques. This is when you relax with a cup of tea or coffee while we do all the work! We will detail our experiences and explain the techniques which we use to create a beautiful and consistent finish. Ask as many questions as you would like whilst we prepare your cupcakes – we encourage all queries, whether on baking 12 individual cupcakes for a dinner party, or 200 identical cakes for a wedding.

We will then move on to the hands-on section of the day, where you will immerse yourself in:-

Sugarpaste Decorations

* Preparing sugarpaste for making small flowers and moulded decorations (buttons, shoes, handbags – to name but a few!)

* Working with food colours to create beautiful (yet edible) colour palettes and schemes

* Making gorgeous life-like small roses using our unique and simple technique

* Using a variety of cutters to make a wide range of sugar flowers

* Learning how to master simple and effective techniques to make your flowers 'pop' and stand out from the crowd

Buttercream Making

We will demonstrate our very own technique for making smooth and mouthwatering buttercream. We will explain why our technique and recipe differs from the rest and allows us to create perfect swirls and tops.

Piping

Not all nozzles are created equal! Find out how to avoid common nozzle crimes – how to tell the good from the bad and avoid costly mistakes. You will learn how to:

* Work confidently with buttercream to create our signature flat bases in preparation for swirls.

* Pipe our signature Rose Swirl, the Big Soft Swirl, the French Swirl and, of course, the ever popular Grass Top

You will have ample opportunity to practice your swirls before unleashing your creative flair on a dozen freshly baked cupcakes. Finally, 'ooh' and 'aah' over your creations before heading home with the spectacular fruits of your labour.

All ingredients and equipment for the day are provided, you do not need to bring anything with you! Should you wish to buy any equipment used during the class, there will be a small selection available to purchase.
