This is the newest and third in the series of wedding cake courses that we run in our workshop. Most of our classes, such as the Contemporary Tiered Wedding Cakes Class, focuses on chocolate ganache as an undercoat on cake, to give smooth and sharp edges. However, if you are not a big fan of chocolate, or of sharp edges, this is a problem! A large number of wedding cake makers use buttercream on cakes and then fondant - to give a smooth silhouette to their cakes. This two day class will teach you how!
This class will be taught by Alison Newman, who owns Little Sugar Box. Little Sugar Box is a much respected and well established wedding cake business in Kent, England. Alison brings with her a wealth of experience in making and delivering wedding cakes.
Just a quick question answered - we get this question a lot! The question is why is this such a dinky little cake for a two day class? First of all, you will still learn about all the techniques you will need to know to transform this design into a bigger cake. Or, indeed, use the methods taught to make a much larger tiered cake. For classroom purposes, we keep our cakes small so that they can be carried home easily. You will also learn how to make a beautiful sugar rose in this class, plus little flowers and leaves and how to securely attach these to the wedding cake in a food safe manner.

How to level sponge cakes in preparation for turning them into wedding cakes
How to cover a real sponge cake with buttercream to get nice straight and smooth sides
How to cover a buttercream covered cake with marzipan and then fondant, also called ready to roll royal icing or sugarpaste
How to cover a chamfered edge (rounded edge) cake dummy with fondant, an all important skill in the cake industry!
How to make a gorgeous large sugar rose
How to make very delicate filler flowers and buds
How to use florist paste correctly
How to dowel and assemble a wedding cake
All the information you need to know to turn this into a much large wedding cake!
