This is a brand new class that combines five keys skills in wedding cake decorating that are trendy and classic, all at the same time. Learning these fundamental skills will allow you to create your very own masterpieces, the possibilities are endless! This class will be taught by the exceptionally skilled Graziella Augier, a multiple award winning cake artist who travels all the way from France to teach at Fair Cake. Graziella is best known for her incredible skills in sugar floristry - a close second is her attention to detail to sharp edges. Bring a notepad and pen and your questions, you will want to make the most of your two days with her!
In this intensive two day class, you will learn:
* How to work with white chocolate ganache
* How to level and fill a cake with white chocolate ganache and achieve sharp edges
* How to make edible lace
* How to make a beautiful statement rose and leaves using florist paste
* How to cover a cake dummy and real cake with fondant and perfect those sharp edges
* How to use edible lustre dust to create a beautiful sheen on your cake using no alcohol
* How to use royal icing to pipe simple but effective designs on your wedding cake
White chocolate ganache is a beautiful but tricky medium to work with. In contrast with dark chocolate ganache, it is more difficult to work with, however, it allows you to create a white cake with no dark colour showing through fondant.
In this class, you will tackle edible lace. This is a beautiful medium to work with. However, it is difficult when the weather is humid. With the best dehumidifiers in the world, if your cake is displayed on a day with high humidity, the bow will melt droop. If you are lucky enough to live in a dry place, the bow will stay put. Having lectured you thus, the point of this lecture is that this lace bow will not work out on a humid day. You are welcome to try to make it in our workshop, but no results are guaranteed! The lace against the cake? That will be absolutely fine!

You will have the choice of making either a red rose or a white rose with shading. Please email us once you have booked your class which colour you would like to work with so that we can have it ready for you. The size of your rose, number of leaves and whether or not you have the time to make a bud will depend entirely on your skill levels. Please do not feel under any pressure to finish everything. We are here to teach you the techniques and as long as you go home confident that you will be able to recreate this cake at home, we will have done our job. Please bring a notepad and pen. We do not allow videos, but you are welcome to take pictures and, of course, ask questions. PLEASE ask questions during the class, not during lunch time or after class!
All ingredients and equipment for the day are provided, you do not need to bring anything with you.
