This is a five day intensive tiered wedding cake decorating class taught by Graziella Augier and we could not be more excited about it! Graziella is French and comes all the way from Provence to teach here at Fair Cake. She is known for her super realistic sugar flowers and attention to detail. If you are a baker and are looking to hone your cake decorating skills to make your cakes look wedding-worthy, this is the course for you!

In this five day class you will learn:

  • How to split, layer and cover sponge cakes to create a perfect foundation for a wedding cake
  • How to use dark and white chocolate ganache to cover a round and a square cake
  • How to create beautiful and neat sharp edges on round and square cakes using sugarpaste (also known as fondant)
  • How to cover cake dummies for adding height and drama to your cake
  • How to make beautiful sugar tulips and an orchid flower 
  • How to use edible paint to create depth and dimension on cakes
  • How to make a sparkly geode cake with gold (or silver enhancements)
  • How to cover a cake with a beautiful marble effect with gold or silver details

You will go home with:

  • Two tiered cakes that you will have decorated yourself - one with round and one with square tiers
  • New skills and confidence in working with edible paints
  • Knowledge about sugar flower making and essential tools to buy (and leave out non-essentials!)
  • An understanding of the wedding cake making process
  • Confidence to recreate these and more complicated designs
  • Answers to your cake questions!


All ingredients and equipment for the day are provided, you do not need to bring anything with you.  Please note that you will be encouraged to work at your own speed. Everyone in class is likely to have different skill levels. The teacher will ensure that you work at a pace suitable for you.

Please note that pictures are for illustrative purposes only. You will take home two tiered cakes. Cakes will be prebaked for you in this class.
