A perfect beginners class for those who wish to explore cake making as a potential career move. This is a five day intensive class that teaches you everything from baking different kinds of cakes to finishing them with mouth watering Swiss Meringue Buttercream, chocolate ganache, fondant and more. You will learn how to make simple but very effective sugar roses, learn how to make straight edges on your cake, level and fill cakes, work with chocolate ganache and learn tricks to make your cakes look absolutely brilliant! This class is a great introduction to making wedding cakes and birthday cakes and will give you an idea of how much time and effort is involved in making those show stopping creations that you see on social media!

Class runs from 10am - 4:30pm each day with a one hour break for lunch. We aim to finish at 4:30, but sometimes classes may overrun. 

What sets us apart

At Fair Cake, you will only use the BEST quality ingredients available. In all our baking classes, the best quality ingredients are sourced. This includes real butter (President) in all the cakes, beautifully delicious real Belgian chocolate (Callebaut), and real vanilla extract. No shortening is allowed in baking, neither any shelf life enhancing additives. You work under our supervision and we ensure that you do not develop bad habits in baking. 

In this five day HANDS-ON baking and decorating course, you will learn:

  1. How to bake two different kinds of chocolate cake
  2. How to bake a flavoursome orange cake
  3. How to bake a classic vanilla cake
  4. How to make Swiss Meringue Buttercream (SMBC)
  5. How to fill and cover a cake with SMBC and achieve smooth, straight sides and top
  6. How to use a cake turntable effectively
  7. How to cover a layered chocolate cake with chocolate ganache and achieve straight sides and sharp edges - this is absolutely key for any serious cake maker, the hottest new trend to sweep the cake industry 
  8. How to cover a chocolate ganache covered cake with sugarpaste (also called fondant) to make a wedding cake
  9. How to make beautiful and delicate sugar roses and leaves, a must for every wedding cake maker
  10. How to cover a dummy cake with sugarpaste to add height to a cake
  11. How to finish a wedding cake with to give it the all important wow factor
  12. How to layer a cake with SMBC buttercream and use a piping bag for making swirls
  13. How to use chocolate ganache for making drips- this style is much in demand, it is quite the show stopper!
  14. Plenty more - come armed with cake questions!

This is THE class to get started with in your cake journey. Students who come to this class get a better understanding of their own skills and abilities. The entire class is very HANDS-ON. You will be learning everything by doing everything - all the baking, buttercream making, sugar flower making and finishing the cakes will give you plenty of experience and a real understanding of what is involved in cake baking and decorating to a high standard.

Please bring a note pad and pen to the class. We encourage you to ask as many questions as possible during the class. Please do not use lunchtime or time after class for questions, you teacher will need a break! At lunchtime, we expect all students to leave the workshop for one hour. This is so that the workshop can be prepared for the afternoon session. There are plenty of places nearby where you can have lunch - our workshop is in Greenwich, a much loved London tourist attraction and there is no shortage of good cafes and restaurants nearby. While we encourage photographs, please note that we do not allow videos in this class.

If you would like, you can bring a large bag to carry your cakes home. We provide sturdy boxes, but you may find it easier to carry your cakes in a bag (such as an Ikea bag).
