This is a brand new wedding cake baking and decorating class starting in May 2019. Over four intensive days, you will be amazed at what you can do! This class covers everything from baking a wedding cake, with all the details that go into it, to decorating it with stunning sugar flowers, royal icing stencilling  and marbled effect sugarpaste (fondant). We have crammed this cake course full of techniques that will allow to recreate a wedding cake, from scratch, at home. Learn all the secrets of keeping wedding cakes smooth and straight, and delicious, at the same time!

Class starts at 10am and we aim to finish by 5pm everyday.

The sugar flowers in this class have been especially chosen to give your cake a sleek and modern look. Lets be honest, some sugar flowers can look SUPER dated. Not here! We have chosen a very modern colour scheme. We have also chosen to make succulents (bang on trend), a delicate English Rose (special) and eucalyptus leaves - a very Pinterest worthy collection of sugar flowers, much in demand by all the brides and grooms planning their special days on Pinterest!

This is a perfect class for you if you have a bit of experience baking cakes making sugarflowers and would like to take your skills to the next level.

In this four day class, you will learn:

  1. How to bake two different flavours of cake, chocolate and orange - with the perfect crumb texture for wedding cakes
  2. How to work with chocolate buttercream as a filling layer for your cake
  3. How to layer cakes for a tall tier with delicious filling
  4. How to work with chocolate ganache to cover the sides and top of your tall cake, and achieve a super sharp finish
  5. How to cover a chocolate ganache covered cake with marble effect fondant (on a tall tier cake)
  6. How to make beautiful sugar flowers, including a delicate English Rose, succulents, common rose and leaves, a step above the rest and arrange them in wreath on your cake
  7. How to use royal icing for stencilling on your cake
  8. How to cover dummy cakes with fondant and use these to enhance the height and look of your cake
  9. How to use ribbons and sugar flowers to decorate your cake
  10. Answers to any cake questions you can throw at us!

You will go home with:

  1. A three tiered cake, with one (tall) real tier and two dummy tiers 
  2. Confidence in making delicate and contemporary design sugar flowers
  3. Skills to bake and decorate a wedding cake at home
  4. New abilities in using a turntable, essential cake decorating equipment and food colours, effectively
  5. Knowledge of the  best brands of cake decorating equipment available in the market
  6. Ability to "wrap cover" a tall tier cake with sugarpaste (fondant)
  7. An understanding of the timeline and effort involved in making a wedding cake from scratch

All ingredients and equipment for the day are provided, you do not need to bring anything with you.  Please note that you will be encouraged to work at your own speed. Everyone in class is likely to have different skill levels. The teacher will ensure that you work at a pace suitable for you.

However, the design and colours on class days are led by the teachers in order to ensure that everyone works at a similar speed and gets the maximum out of this class.
